With Christmas 5 days away, I’m sure your days are just as busy as mine. Here are a few of our go-to easy meal ideas to get you through the next 5 days!

Chicken with Potatoes and Veggies:

  • Chicken: My husband usually grills the chicken outside while I cook everything else inside. This helps to save time, plus he can watch Braxton play while he grills.
  • Potato: We usually buy small red potatoes. I cut them in quarters, drizzle them with olive oil, garlic salt, salt, pepper and rosemary or oregano. I bake them at 425 degrees for 30 minutes. (Flipping them halfway through.)
  • Veggies: I cut up 3 bell peppers (any color), a zucchini, and a red onion in big chunks. I drizzle them olive oil, salt and pepper. I bake them at 400 degrees for 40 minutes. (Flipping them halfway through.)

Chicken Pasta Salad:

  • Chicken: We usually use the leftover grilled chicken.
  • Pasta: I usually cook either penne or rotini pasta. Since I add this to the salad, it’s better to be al dente. I usually cook it about one minute less then the lowest amount of time written on the package.
  • Salad: Any kind of mixed green salad with your choice of dressing. We just mix together all the ingredients to make a hearty bowl.

Ground Turkey Bowls:

  • Ground Turkey: I cook this on a skillet with just salt and pepper.
  • Quinoa: I usually cheat with this and buy a microwave package of quinoa from Sams.
  • Brussel Sprouts: Chop and add olive oil, salt and pepper. Bake in the oven at 400 degrees for 40 minutes. (Flipping halfway through.)
  • Bonus: Add Avocado and mix all ingredients together in a bowl.

Ground Turkey Lettuce Wraps:

  • Ground Turkey: Cook on a skillet with just salt and pepper.
  • Lettuce Leaf: Wash and just add some ground turkey on top.
  • Bonus: Add Avocado or Sauce. (We love Salt Lick sauce on top.)

Bow Tie Pasta with Salad:

  • Bow Tie Pasta: Cook as directed. Add your favorite sauce. I usually add chicken or black olives if we use an Alfredo sauce. We also love pesto. (I switch off weeks doing Bow Tie and Spaghetti. With Spaghetti I use a red sauce and add spinach leaves to the sauce.)
  • Salad: Any type of side salad.

These are just some easy meal ideas that are Braxton approved. We try to always have something on the menu that I know he will eat. I hope everyone is enjoying this last weekend before Christmas!
